This is hands down the best pistachio salad (Watergate salad) recipe — and it’s the one that brings back all the warm, fuzzy memories. My grandma used to make this for Easter, church potlucks, and Sunday dinners, and it always felt like a little moment of magic in a bowl. The combination of creamy pistachio pudding, juicy pineapple, fluffy mini marshmallows, shredded coconut, and crunchy crushed pistachios is perfectly balanced — sweet, soft, and just a little nutty in all the right places.

This Pistachio Ambrosia Salad also known as the Watergate Salad is a creamy fruit salad made with pistachio jello loaded with pineapple, cherries, coconut and mini marshmallows with pistachios through it . 

Ingredients

  • 1 (3.4 oz) box instant pistachio pudding mix

  • 1 (20 oz) can crushed pineapple (with juice)

  • 1 cup miniature marshmallows

  • ½ cup sweetened shredded coconut

  • ½ cup crushed pistachios

  • 1 (8 oz) container whipped topping (like Cool Whip), thawed

  • Maraschino cherries (for garnish)

Directions

  • In a large bowl, combine the dry pistachio pudding mix and the entire can of crushed pineapple (including juice). Stir until fully blended. The pudding mix will thicken naturally.
  • Add marshmallows, shredded coconut, crushed pistachios, and mandarin oranges (if using). Gently mix.
  • Fold in whipped topping until light, creamy, and fully combined.
  • Cover and refrigerate for at least 1 hour (4 hours is better). This helps the flavors blend and the texture set.
  • Top with maraschino cherries, extra coconut flakes, crushed pistachios, a few marshmallows for that classic look. Serve cold and enjoy!

  • Do not freeze (texture changes)
