Ingredients

  • For the Brownie Bottom

  • • 1 cup unsalted butter, melted

  • • 1 ½ cups granulated sugar

  • • ¾ cup brown sugar

  • • 3 large eggs

  • • 2 teaspoons vanilla extract

  • • 1 cup all-purpose flour

  • • 1 cup cocoa powder

  • • ½ teaspoon salt

  • For the Cheesecake Layer

  • • 3 packages (8 oz each) cream cheese, softened

  • • 1 cup granulated sugar

  • • ¾ cup sour cream

  • • 3 large eggs

  • • 1 tablespoon vanilla extract

  • • 2 tablespoons heavy cream

  • For the Chocolate Ganache Topping (optional but dreamy)

  • • 1 cup chocolate chips

  • • ½ cup heavy cream

Directions

  • Step 1 — Prep & Preheat
  • Preheat oven to 325°F (163°C).
  • Grease a 9-inch springform pan.
  • Line the bottom with parchment paper for easy removal.
  • Step 2 — Make the Brownie Bottom
  • In a bowl, whisk melted butter, granulated sugar, and brown sugar.
  • Add eggs + vanilla and mix until smooth.
  • Stir in flour, cocoa powder, and salt until just combined.
  • Pour batter into the springform pan and spread evenly.
  • Bake for 20 minutes, just until set on top.
  • (You want it slightly under-baked — it will finish cooking with the cheesecake.)
  • Step 3 — Make the Cheesecake Filling
  • Beat cream cheese until smooth and fluffy.
  • Add sugar and mix until creamy.
  • Mix in sour cream, vanilla, and heavy cream.
  • Add eggs one at a time — mix gently and avoid over-whipping.
  • Pour cheesecake batter over the brownie layer.
  • Step 4 — Bake Low & Slow
  • Wrap the outside of the pan with foil.
  • Place pan in a larger baking pan.
  • Pour hot water halfway up the sides (water bath).
  • Bake for 55–65 minutes:
  • edges should be set
  • center should have a slight jiggle
  • Turn off oven, crack the door, and let it sit for 1 hour.
  • Then chill in the fridge for at least 4 hours (overnight is best).
  • Step 5 — Add Chocolate Ganache
  • Heat heavy cream until steaming.
  • Pour over chocolate chips.
  • Let sit 1–2 minutes, then stir until smooth.
  • Pour over chilled cheesecake and let set.
  • Slice. Serve. Fall in love.

Notes

  • Use a water bath for a crack-free, creamy cheesecake.
Slightly under-bake the brownie layer so it finishes cooking under the cheesecake.
Let cheesecake chill at least 4 hours or overnight for perfect texture.
Ganache is optional, but it adds extra richness and elegance.
Add mix-ins like espresso powder, crushed Oreos, peanut butter swirl, or raspberry drizzle to customize your cheesecake.
Slice with a hot knife for clean cuts.
