Soft, Sweet, and Perfect for Quiet “Me Time” Moments or a Girls night in.

Ingredients

  • 1/2 cup melted unsalted butter

  • 1/2 cup white sugar

  • 1/3 cup light brown sugar

  • 1 large egg

  • 2 tsp vanilla

  • 1 1/4 cup all purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup high quality white chocolate

  • 1 cup freeze dried strawberries cut into small pieces

Directions

  • In a mixing bowl, whisk together melted butter & the sugars until it resembles wet sand.
  • Add the egg & vanilla & whisk until well combined.
  • Sift in the flour, baking soda, and salt. Fold gently
  • Mix in white chocolate & freeze dried strawberries, Fold gently & don’t overmix.
  • Using a large ice cream scoop, scoop the dough (makes about 9-10 cookies) & refrigerate for 30 minutes to overnight.
  • To bake, preheat the oven to 350F. Roll out each cookies dough in your hands & place at least 2 inches apart on the parchment lined baking tray. DONT add extra freeze dried strawberries on top of the cookies before baking as they will burn. If you would like to add them for decoration, do it immediately after baking.
  • Bake for 9-12 minutes or just until the sides of the cookies have set. Underbake your cookies if you want them chewy.
  • Let the cookies cool in the tray for 5-10 minutes. then use a spatula, transfer to a cooling rack to cool completely u005c.

Notes

  • Tip:
    If you want these to look extra pretty for photos, press a few extra strawberry pieces and white chocolate chips on top of the cookies right after baking.

Can I freeze the cookie dough?

Yes! Scoop into dough balls and freeze for up to 2 months. Bake straight from frozen — just add 1–2 extra minutes to the baking time.
